Spiced lamb patties wrapped in pita bread with minted yoghurt sauce

Ingredients
- 750g lamb mince
- 30g roasted pine nuts
- 1 small red onion, finely chopped
- 1 lemon, zested
- ½ bunch mint leaves, chopped
- 1 teaspoon ground cumin
- ½ teaspoon ground cinnamon
- salt and freshly ground black pepper
- olive oil for grilling
- 200ml thick yoghurt
- ½ bunch mint leaves, chopped
- 1 Lebanese cucumber, grated
- 2 tablespoons lemon juice
- salt and freshly ground black pepper
- 100g baby spinach leaves
- 4-6 rounds pita bread
Method
- Place the lamb mince into large mixing bowl and add the pine nuts, onion, lemon zest, mint, cumin, cinnamon, salt and pepper
- After the kids have washed their hands get them to combine it all together, squishing it between their fingers to make sure it is evenly mixed
- Then form the mix into small sausage shaped patties
- Brush with a little oil and grill or panfry, turning once or twice for 6-8 minutes until cooked
- Mix together the yoghurt, cucumber, lemon juice, salt and pepper
- Divide the spinach leaves between the pita bread, place 2 or 3 of the patties down the centre of the bread and spoon over some of the yoghurt mix
- Roll up, wrap in greaseproof paper and tie with some string
