
Ricotta fritters with honey and fresh figs

Ingredients
- 450g fresh ricotta
- 4 eggs
- 100g plain flour
- 2 lemons, zested
- 50g caster sugar
- 40g melted butter
- vegetable oil for cooking
- 1 teaspoon ground cinnamon
- 100g caster sugar
- honey
- fresh figs
Method
- Making the batter is a great job to get the kids to do
- Whisking can be a wonderful way to release excess energy
- Whisk the ricotta in a large bowl until smooth
- Add the eggs and whisk to combine
- Using a wooden spoon, add the flour, a little at a time, working it into the ricotta
- Finely chop the lemon zest and add to the mix with the sugar and melted butter and beat until combined
- Place vegetable oil in a large saucepan about 2cm deep
- Heat the oil and then add a spoonful of the ricotta mix
- Cook until lightly golden all over
- Remove with a slotted spoon and drain on kitchen paper
- Continue cooking until all the batter is used
- Mix together the cinnamon and sugar
- Serve the ricotta fritters while still warm with sliced figs
- Sprinkle with the cinnamon sugar and drizzle over some honey
