
Pork and beansprout salad

Ingredients
- 2 cloves garlic
- 30ml peanut oil
- 120g pork mince
- 250g beansprouts
- 1 bunch garlic chives
- 15ml fish sauce
- pinch freshly ground white pepper
- 1 teaspoon white sugar
- ½ bunch coriander leaves
Method
- Peel and finely dice the garlic
- Heat the oil in a wok or large frypan, add the garlic and fry until golden
- Add the pork mince and stir over a high heat for 4-5 minutes until the pork is cooked
- Add the beansprouts, chopped garlic chives, fish sauce, pepper and sugar and stir fry until beansprouts start to wilt
- Serve with chopped coriander leaves
