
Peppered steak with mushroom sauce and steamed asparagus

Ingredients
- 1 small brown onion
- 1 clove garlic
- 75g butter
- 250g mushrooms
- 2 tablespoons Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon Worcestershire sauce
- 100ml cream
- 2 tablespoons chopped parsley
- 600g beef fillet, trimmed
- and cut into 8 slices
- salt and freshly ground black pepper
- 50g butter
Method
- Peel and finely dice onion and garlic and slice mushrooms
- Heat a large frypan over medium heat and add butter
- Sauté onion and garlic until soft, add mushrooms, cook until golden
- Add mustard, lemon juice, Worcestershire and cream
- Simmer for 3-4 minutes, add parsley and keep warm
- Season the beef slices with a little salt and lots of pepper
- Heat a large frypan over a medium to high heat
- Add butter and sear beef until cooked to your liking
- Remove from pan and keep in a warm place for a few minutes to rest
- Serve with warm mushroom sauce, boiled baby potatoes and steamed asparagus
