Ham, ricotta and cucumber rolls

  • 100g ricotta
  • 1 teaspoon seeded mustard
  • salt and freshly ground black pepper
  • 1 Lebanese cucumber
  • 4 slices ham, approximately 2-3mm thick


  1. Mix together the ricotta and mustard and season with salt and pepper
  2. Finely slice the cucumber longways
  3. Evenly spread the ricotta mix over the slices of ham
  4. Layer over the cucumber slices and roll each piece of ham into a long cigar shape
  5. When ready slice into rounds and serve with drinks
