
Egg and bacon bread and butter pudding

Ingredients
- 8-10 slices multi grain bread
- butter
- 6 slices middle cut bacon
- olive oil for cooking
- 250g fresh ricotta
- 75g grated parmesan
- ½ cup parsley, chopped
- 6 eggs
- 225ml cream
- sea salt and freshly ground black pepper
Method
- Preheat the oven to 180° C and butter a large baking dish
- Generously butter each slice of bread
- Slice the bacon into thin strips and sauté in a little olive oil until crisp, drain and set aside
- Place a layer of the bread at the bottom of the baking dish
- Sprinkle over a little bacon, parmesan, ricotta and parsley
- Place another layer of bread on top and sprinkle again
- Continue with one more layer of all the ingredients
- Whisk together the eggs and cream and season with salt and pepper
- Pour over the layers of bread and finish with a sprinkle of parmesan
- Place on a baking tray and cook for 20 minutes or until the egg mix is set and the top is beginning to brown
- Serve immediately with a green salad
- Once the bacon has been cooked and parsley chopped this recipe is perfect for even the younger kids to do on their own
