
Dreamy summer berry fruit salad

Ingredients
- 90g caster sugar
- 3 eggs
- 150ml passionfruit or orange juice
- 50g butter
- 150g marshmallows
- 450ml cream
- 250g strawberries
- 150g raspberries
- 150g blackberries
Method
- Enlist the help of the young ones and get them to whisk the sugar and eggs together until well combined
- Pour into a saucepan with the passionfruit or orange juice and cook over a low heat until mixture thickens
- Take off heat, stir in the butter and set aside to cool
- Using a pair of kitchen scissors, get the kids to chop the marshmallows and fold them into the cooled custard
- Then they can whip the cream and fold this through as well
- Wash and chop the strawberries and add to the mix with the raspberries and blackberries
- Fold through very gently
- Place into a glass serving bowl and chill
- To serve, sprinkle over some extra berries and dust with icing sugar
