Cinnamon yoghurt pancakes with maple syrup and banana

  • 3 eggs, separated
  • 50g caster sugar
  • 75g plain flour
  • 1 tablespoon cornflour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 250ml yoghurt
  • Butter for cooking
  • 2 bananas
  • Maple syrup
  • Cinnamon


  1. Place the egg yolks and sugar into a large bowl and whisk until pale and creamy
  2. Sift together the flour, cornflour, baking powder, cinnamon and salt
  3. Fold through the egg mix and then add the yoghurt
  4. Whisk the egg whites until stiff and gently fold through the batter
  5. Heat a large non stick frypan over a medium heat
  6. Add a little butter then when it is foaming add 1 large spoonful of batter
  7. Cook until golden then flip and cook the other side
  8. Stack onto serving plates and serve with diced banana, maple syrup and a sprinkle of cinnamon
