
Chorizo and capsicum skewers with buttered couscous

Ingredients
- 2 chorizo sausages
- 1 red capsicum
- 1 green capsicum
- 250g couscous
- 375ml water
- 50g butter
- salt and freshly ground black pepper
Method
- Slice the chorizo sausages into 1cm rounds
- Cut the capsicums into 1-2cm squares setting aside any capsicum off cuts
- Thread the sausage and capsicum alternatively onto 8 skewers
- Get the kids to soak the skewers in water and then they can thread them for you
- Place the couscous into a heatproof bowl
- Boil the water and pour over the couscous
- Add the butter, cover and let stand for 10 minutes
- Using a fork, mix through the butter and fluff the couscous
- Season with salt and pepper
- Finely dice any of the capsicum off cuts and mix through the couscous
- Barbecue the skewers until charred and serve with the couscous
